Easy Healthy Breakfast: Bacon Egg Cups

It's Monday morning and your alarm goes off. 

You had a busy weekend and didn't have time to think ahead to your meals for the week. 

What's a usually-organized healthy girl to do?

Be glad that she has a healthy breakfast all set for her in the her feezer ready to be heated up and enjoyed. 

This is my go-to freezer breakfast (it's also what I make if I have a lot of people staying at my house for a quick and easy breakfast).

Bacon Egg Cups

To make 6

  • 6 slices of bacon
  • 6 eggs
  • dash of oregano, parsley, basil, sea salt
  • parmesan cheese (optional)

Line one muffin tin with 1 slice of bacon
In a bowl, crack 1 egg and pour on top of bacon
Repeat for remaining bacon/eggs
Add a dash of oregano, parsley, basal & sea salt to each egg
Bake at 350 for 20 mins (or until egg is cooked through)

Keep in fridge for a week or freeze for 3 months.
