If you're anything like me, you're always on the lookout for a great way to get a sauce/dip/spread into your mouth.
My go-to food for this job is socca bread- a simple, gluten-free, versatile and delicious flatbread!
Traditionally found in the South of France, socca bread is great served with dips, cheeses, and as a base for pizza!
The fun thing about this bread is it's versatility- you can add whatever spices go with what you're making.
Ex: Pizza night? Why not add some parsley and basil. Serving with cheese? Perhaps a teaspoon of rosemary would do the trick! And if you don’t want to add anything- don’t worry. The basic recipe with salt and pepper is just great.
Makes 1 thick 10” round bread or 2 x 10” thin ones! Recipe can be multiplied for leftovers.
- 1 cup chickpea flour
- ½ tsp baking powder
- 1 tsp sea salt
- 1 tsp pepper
- 1 cup room temperature water
- 1.5 tbsp coconut oil (plus more for greasing pan)
- (Optional) Spices of your choice (rosemary, oregano, parsley, whatever you’re in the mood for!)
Heat cast iron pan in an oven that is being preheated to 350 degrees (if you don't have a cast iron pan, that's ok! just grease a normal pan, and cook this on your stove top).
Meanwhile, combine chickpea flour, baking powder, salt and pepper in a bowl
Slowly mix in water and coconut oil
Add any additional spices
Remove cast iron pan from oven and grease if necessary
Pour batter in preheated cast iron pan.
Bake in oven for 10 minutes.
