Healthy Banana Muffins

My legs slightly shook as I climbed up the wooden chair she placed next to the counter for me. She always warned me to be careful.

A smile crossed my face as I noticed the kitchen utensils she had placed on the counter, all set for me to scoop, measure & mix.

My heart filled with excitement knowing that these individual ingredients would turn into a delicious snack that I created with my own two hands (with the help of my Mum's too!).

These banana muffins are one of the first recipes I remember making with my Mum as a young girl.  

Although I'm sure I must have caused her a lot of stress by being a messy baker back then (and proudly still am today) there's nothing like the smell of these muffins to bring me back into our family kitchen, creating, playing and baking with my Mum.

I’ve cleaned up some of the ingredients to fit with my food philosophy (bye bye vegetable oil, hello coconut oil) and I'm excited to share it with you.

Healthy Banana Muffins

  • 3-4 ripe bananas
  • just under 1/2 cup melted coconut oil (~6 tbsp)
  • 1/4 cup (ideally organic) sugar
  • 1 tsp sea salt
  • 1.5 cups (ideally organic, unbleached) flour
  • 1 tsp baking soda
  • 1 egg
  • 1 tsp vanilla
  • chocolate chips (optional) - if you asked my hubby, he'd say essential.

Preheat oven to 350ºF
Mash bananas in  a large bowl
Add oil, sugar & salt and mix
Add flour & baking soda and mix
Add egg & vanilla and mix. 
If you're using chocolate chips, add them in now.
Bake for 15-20 minutes until golden brown on the outside. Voila! 

Easy Peasy.

These are so quick to whip up, you can probably finish it before this song is done playing. Give it a shot (but maybe play it 2 times cause it's kind of a short song...)
