Coconut Vanilla Chia Pudding
It took me a while to jump on the chia seed bandwagon.
That being said, I have a jar sitting in my cupboard just waiting to be used (like any true foodie, right?).
Here's a recipe I came up with. It's tasty, nourishing & keeps me full all morning long.
Coconut Chia Pudding
- 2 Tbsp chia seeds (where to buy)
- ½ cup coconut milk
- ¼ tsp. of vanilla
- dash of maple syrup (or honey)
Mix the first 3 ingredients in a bowl and place in fridge for at least an hour. When you’re ready to eat it, stir in the maple syrup and enjoy!
I won’t lie to you, for some reason the first bite doesn’t taste very good. But then (perhaps blame it on the magical-ness of the chia seeds) it becomes so delicious that you don’t want it to end!
